Braised beef short rib recipe review

So, I LOVE LOVE LOVE www.smittenkitchen.com.  I like all her recipes and like the way she describes the techniques and tidbits to make the dish easier. She always inspires me to try different dishes.

With the holidays I decided to make the Braised beef short rib dish. I absolutely love short ribs so decided I would attempt this because I like a big challenge. She revised this recipe from Sunday Suppers at Lucques.  I've eaten at Lucques and LOVED it so I knew this was a must try.

I have no pictures of this dish because it was pretty much a VERY ambitious cooking project. No time. Some negatives: I had to double the recipe. I started this way too late. No braising pan.

Okay, I could do without the braising pan. I just ended up using a pyrex baking dish or a dutch oven larger that 5 qts. I also ended up with WAY too much braising sauce. Didn't all fit in the pyrex dishes and I had doubled the recipe as well.

Taste: 4 out of 5 stars. Especially with the creme fresh horseradish sauce. Such a great touch.

Difficulty: 5 being the hardest, a 4/5.

Cost: about 4 pounds of short ribs cost me about $22 bucks from my local Korean market. All other produce I got at the Korean market as well. Swiss chard cost me 79 cents a bundle vs. the $2/bundle at Albertsons. I got the pearl onions at Trader Joe's in the frozen veggie area.

Would I make this dish again?
Maybe for a VERY special person and definitely not for a large group.

Tips: Scale down with the suggested salt amount. I like salty foods, however, it was a bit too salty (the mashed potatoes and creme fraiche to be exact)
